Resolutions

On our drive back to Fayetteville today, Ross and I talked about the year ahead and made some resolutions. We wanted to share them here so you can (1) keep us accountable, and/or (2) laugh with us when we fail miserably, as people who make resolutions so often do.

Leah's Resolutions
  • lose weight; fit into skinny (or even fat) jeans
  • post on the blog at least once per week
  • keep the bathroom cleaner (trust me; this one needs to happen)
  • use reusable grocery bags
  • learn how to cook dry beans and use them in more recipes
Ross's Resolutions
  • read 24 books this year
  • try at least one new food per month (this is a big deal!)
  • find a job (also a big deal!)
  • take a vacation with my pretty wife

  4. My resolution is to read and comment on all of your blog posts, in the hopes that it will make you post more! :) And also to lose 10 more pounds before my wedding. Ugh. But I like Ross' book resolution, as well as the vacation one. But I think my problem is that I want to take too many vacations, not just one.

  7. Dry beans: Wash 1 lb dry pinto beans thoroughly and dump 'em in a crock pot (or stock pot if you don't have a crock pot). Add enough water to come up about 2 inches above the top of the beans. Add 2 whole garlic pods, peeled and minced. More if you reeeeeally like garlic. Add one can (soup-can size, not the really big size) chopped tomatoes, and another can (same size) of Ro-Tel tomatoes. Next, add about 2 cups chopped ham, or Italian sausage which has been browned and drained is also very good. Last, snip up a whole package/bunch/bundle of cilantro. Add about 1 1/2 tsp salt. Stir everything and cook on high (if using crock pot) for several hours, or on low if going to be gone all day. When the beans are done, they'll be soft and the soup will be thick and brown, not watery. At the end of the cooking time, fix some cornbread and devour. We also fix rice and mix the beans with the rice, and have it all with the cornbread. Trust me on this recipe. It's larrupin!

  9. @ AuntBee, I haven't yet! This is mostly for two reasons: 1) I have an immense disdain for pork (I know, I'm un-American!), and 2) My husband has an intense hatred for tomatoes. So, I'm waiting to try it (pork-free, of course) until we've got more of a crowd around here than just us two.

    I'll try to remember to post about when I do try it! Thanks for reading and for leaving comments! Makes us feel loved.

  10. SOooo...leave out the pork and tomatoes. Frankly, in my opinion it's the cilantro that makes it. But I'm one of those people who can just sit and eat cilantro. Not that I do. Not at all. Nope, not me.
